Easy Almond Granola

Over the summer, I picked up some local honey at the farmers' market and was immediately craving a yogurt parfait -- but we had just run out of granola. Rather than race to the store, I did a quick survey of the pantry and discovered I could make a simple version from scratch with just 7 ingredients.

I promise you will stop buying granola from the store after trying this recipe. It's crunchy, sweet, salty and nutty. Bonus that it can be made directly on the baking sheet, saving you extra dishes and clean-up.

Though delicious on its own (or with milk), my favorite way to serve this granola is with a big scoop of yogurt, fresh berries and drizzle of honey. Enjoy! -KM

INGREDIENTS
  • 2 cups rolled oats
  • 1/4 cup coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • Sprinkle of Kosher salt
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup slivered almonds

METHOD
  • Preheat oven to 300 degrees F.
  • On a baking sheet, combine the oats, coconut oil, maple syrup, cinnamon, salt, vanilla and almonds. Mix until everything is coated evenly. Spread into a single layer.
  • Bake for 15 minutes. Remove from oven and turn/mix with a spatula. Bake an additional 10-15 minutes; granola will be a nice, light golden color when done. 
  • For the perfect crunch, allow it to sit at room temperature and *cool completely* before eating and/or storing.
  • Granola can be stored in an air-tight container at room temperature for 2-3 weeks (though it won't last that long - trust me!)
